I’ve been in the kitchen this morning whipping up a healthy breakfast of chocolate beet muffins with a Disney Princess!

This recipe is such a quick and healthy solution. It’s loaded with Thrive™ Culinary Algae Oil, Greek yogurt, beets, flaxseeds and flourish flour high fiber flour. But all your kids will notice is the yummy chocolatey flavor!
 
Chocolate Beet Muffins
  • Makes 12 Servings
  • Active time: 10 minutes
  • Total time: 25 minutes
Ingredients:
  • 1 ¼ cup all-purpose flour, such as Flourish
  • ¼ cup unsweetened cocoa powder
  • 2 tablespoons flaxseeds, ground
  • 1 heaping tablespoon vanilla protein powder
  • ¾ cup sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup Thrive™ Culinary Algae Oil (buy here: LINK opens in new tab)
  • 2 eggs
  • ½ cup roasted beets
  • 5 ounces Greek yogurt, plain
  • ½ cup milk

Preparation

Preheat the oven to 350oF with a rack in the center position. Spray or line the muffin tins.

In a bowl, whisk the flour, cocoa, flaxseeds, protein powder, sugar, baking powder and salt. Place the oil, eggs, beets, yogurt, and milk in a blender. Blend until smooth. Pour the mixture into the flour mixture and whisk until thoroughly combined. Divide the batter evenly between the muffin tins (about 1/3 cup per muffin).

Bake for about 15 minutes, or until a knife inserted into the center comes out with only a few crumbs on it. Cool before serving. Leftovers can be stored in the freezer, wrapped in plastic, for up to a month. Simply leave out at room temperature the night before.
